Introduction to the Berenklauw

Grizzly
The Grizzly (Berenklauw) is a popular deep-fried snack from the Netherlands and Belgium, originating in the 1980s. It consists of sliced meat (usually a minced meat stick) with onions in between, skewered and deep-fried. The name comes from its claw-like shape. Due to its affordability, unique appearance, and perfect pairing with sauce, it remains a favorite in snack bars. Pro tip: cook the meatball before frying, but also briefly dip the onion rings in boiling water. That's especially smart if you want to freeze the 'berenklauw' afterwards.
Recipe for the Berenklauw (6 pieces)
Ingredients

1 kg ground beef or half-beef

1 small onion, finely chopped

2 eggs

1 tsp sambal oelek
-
1 tsp mustard
-
1 tbsp ketjap manis (sweet soy sauce)

½ tbsp garlic powder
-
1 tsp nutmeg
-
Salt and pepper

100 g breadcrumbs

2 tbsp cornstarch

150 g flour
-
6 large onions, peeled

6 satay skewers
Instructions

Mix all ingredients for the meatballs together.

Shape the mixture into balls of approximately 160 grams each.

Roll the meatballs through the flour.

Heat the steam oven to 68 °C and cook the meatballs for approximately 35 minutes until the core temperature is 68 °C; use a kitchen thermometer for this. You can also bake the meatballs all around in butter and oil and fry them for approximately 25 minutes; turn the balls regularly. Finally, you can fry the balls and then cook them further in an oven at 180 °C. Let the balls cool.

Cut the onions into 4 equally thick slices. Cut the cooled balls into 4 or 5 slices. If you want to freeze the snack, it is a good idea to briefly dip the onion rings in boiling water. Thread meat and onion alternately onto a satay skewer.

Bake the "berenklauw" all around in the pan until the onion is golden brown or fry for approximately 2 minutes at 180 °C.
