Hamburger

 

The fried hamburger is a variation of the classic hamburger, originating in the 1970s and 1980s in the Netherlands and Belgium. Instead of being grilled, the burger was deep-fried, giving it a crispy texture. The snack quickly became popular due to its easy preparation, extra crunch, and versatility with sauces. It has since become a staple in snack bars. A real burger shouldn't be missed, but should it be grilled or cooked in the steam oven and then deep-fry? You'll find both options in the recipe. Both methods give the burger a unique flavor and texture, so the choice is yours!

Recipe for the Hamburger (4 burgers)

Ingredients

  • For The Hamburger Spice Mix:

    • 2 tsp Cajun spices

    • 1 tsp dried parsley

    • 2 tsp nutmeg

    • 2 tsp white pepper

    • 2 tsp onion powder

    • 1 tsp giger powder

    • 1 tsp coriander powder

    • 2 tsp garlic powder

  • For The Hamburger:

    • 400 g mixed ground meat (half beef, half pork)

    • 1 tbsp hamburger spice mix

    • 1 egg

    • 1½ tbsp cornstarch

    • 4 slices cheddar cheese (optional)

    • 4 hamburger buns, halved

    • 1 tbsp sunflower oil

    • 1 head of butter lettuce, washed and picked

    • 4 tbsp ketchup

    • 4 tomatoes, sliced (without the crown)

    • 4 pickles, sliced

    • 2 onions, peeled and sliced into rings

    • 4 satay skewers (optional)

Instructions

  1. Mix the spices for the hamburger spice mix.

  2. Mix the ground meat, hamburger spices, egg, and cornstarch; I do that in the mixer, so the ground meat becomes a little finer. Form 4 equal patties of about a thumb's thickness.

  3. Cook them in the steam oven at 68 °C. If you don't have a steam oven, you can also cook it in a pan with broth at around 70 °C. Use a kitchen thermometer for this.

  4. Pat the burgers dry well. Set the fryer to 180 °C and fry them crispy in 2 minutes, or heat the oven to 180 °C. Bake the burgers in a blazing hot grill pan on both sides until nice grill marks appear. Cook them for about 10 more minutes in the oven. Or bake them in a non-stick pan in about 4 minutes on both sides until golden brown and cooked through. If you want a cheeseburger, place a slice of cheese on the burger when it is turned over, so that it can melt nicely.

  5. Sprinkle the inside of the buns with the sunflower oil. Toast them golden brown in a grill pan.

  6. Top the bottom halves of the buns with lettuce, top with a hamburger, a spoonful of ketchup, tomato, pickle, onion rings, and the top of the buns. Secure this contraption with a satay skewer, if desired.

  7. Tip: how do you know if your meat is cooked through? If you cook a burger in the oven, you can check if it is cooked by inserting a skewer into it: if clear liquid comes out, the burger is cooked!
