The Sitostick is a popular deep-fried snack from the Netherlands and Belgium, originating in the 1990s as a convenient alternative to satay. It consists of seasoned meat on a skewer, deep-fried to a crispy perfection. Its easy-to-eat format and great pairing with sauces like garlic sauce make it a favorite in snack bars and at fairs.

Recipe for the Sitostick (for 10 sticks)

Ingredients

  • For the Meat:

    • 800 g chicken thigh fillet, in pieces

    • 2 tsp onion powder

    • 1 ½ tsp garlic powder

    • ½ tsp ground coriander seed

    • 2 tsp salt

    • ½ tsp white pepper

    • 2 onions, in wedges

    • 10 satay sticks

  • For The Batter

    • 1 egg

    • 150 ml water

    • Pinch of salt

    • 150 g flour

Instructions

  1. Grind the chicken thigh meat with onion powder, garlic powder, and coriander into a very fine mass. Season with salt and pepper. Shape the meat into a rectangle and steam it until cooked. This is best done in a steam oven, as this will help maintain the shape. Heat the steam oven to 68 °C and cook the chicken for approximately 10 minutes. You can also wrap the meat in plastic foil and cook it in a pan of water at approximately 70 °C.

  2. Afterwards, cut the cooked chicken meat into equal cubes of approximately 3 × 3 centimeters.

  3. If you want to freeze the sitostick, it is a good idea to briefly dip the onion wedges in boiling water.

  4. Thread the onion wedges with the chicken pieces onto the satay skewers. Pat the skewers dry and freeze them..

  5. Mix the egg, water, salt, and flour for the batter.

  6. Coat the skewers with the batter and fry them for approximately 5 minutes at 180 °C. Let them drain on kitchen paper.
