The Mexicano is a popular Dutch deep-fried snack, created in the 1980s by De Vries Snacks. This ribbed, spicy meat snack was inspired by Mexican flavors but is actually a Dutch invention. Its unique texture, bold seasoning, and versatility with sauces quickly made it a favorite in snack bars.

Recipe for the Mexicano (6 strips)

Ingredients

  • 500 g chicken thigh fillet

  • 200 g mixed ground meat (half beef, half pork)

  • 2 tbsp breadcrumbs

  • ½ onion, chopped

  • 2 cloves garlic, chopped

  • 2 tsp salt and a little pepper

  • 2 tbsp ketjap manis (sweet soy sauce)

  • 4 tbsp sambal badjak (chili paste)

  • Pinch of paprika powder

  • Pinch of instant coffee

  • 2 mushrooms

  • ½ red bell pepper, chopped

Instructions

  1. Mix all the ingredients until you have a very smooth minced meat mixture and form patties of 135 grams each.

  2. Place each patty on a sheet of plastic wrap and, with damp hands, shape it into a rectangle of 14.5 centimeters.

  3. Use the back of a tablespoon to press indentations into the minced meat so that the "Mexicano" gets its traditional shape. Wet the spoon so that it doesn't stick.

  4. Wrap the "Mexicano" in plastic wrap.

  5. Cook the snack in a steam oven at 68 °C. If you don't have a steam oven, you can also cook it in a pan with broth at around 70 °C. Use a kitchen thermometer for this.

  6. Let the "Mexicano" cool completely, pat it dry, and fry it for approximately 4 minutes at 180 °C.
