Chicken Satay
The satétje is a popular fried snack that originated in Indonesian cuisine. In the 1960s and 1970s, the idea of skewered grilled meat was transformed into a deep-fried version in the Netherlands, typically made with chicken or pork. The crispy exterior and juicy interior, paired with a spicy satay sauce, quickly made it a favorite in snack bars. The satétje has since become a classic and a beloved choice for many.
Recipe for Satétje (4 servings)
Ingredients

1 lemon

4 shallots, chopped

5 cloves of garlic, minced

2 tsp turmeric
-
1 tbsp coriander powder
-
2 tbsp dark brown sugar

150 ml ketjap manis (sweet soy sauce)

500 g chicken thighs, in 3 × 3 cm cubes
Instructions

Soak the satay skewers in warm water.

Grate the yellow peel of the lemon, halve the lemon and squeeze it out. For the marinade, puree shallots, garlic, lemon zest, lemon juice, turmeric, coriander powder, brown sugar and ketjap with an immersion blender.

Marinate the chicken for about 4 hours in the marinade.

Thread the chicken pieces onto the satay sticks.

Cook this snack for about 10 minutes in the steam oven at 68 °C. If you do not have a steam oven, you can also cook it in a pan with broth at around 70 °C. Pat the satays dry well before frying.

Fry the satay for about 3 minutes at 180 °C. Drain on kitchen paper and serve with peanut sauce.
